Since 2017, the Acipenser Nudiventris species has thrived in the optimal conditions of Lake Mantasoa in Madagascar, situated at an altitude of 1,400 meters. The Shipova caviar, harvested from this sturgeon, boasts stunning eggs in shades of olive-green or water-green, accentuated with delicate silver highlights. Occasionally, the grains may appear in a rare pearly white, positioning this caviar among the most extraordinary varieties globally.​

Royal Shipova

The « naked-belly » sturgeon

The wild Acipenser Nudiventris sturgeon once thrived in the Aral Sea in Kazakhstan, boasting an annual catch of up to 600 tons in the 1930s. However, by 1960, the catch dramatically decreased to merely 6 to 9 tons annually. In the Caspian Sea, the Acipenser Nudiventris species constituted no more than 1% of the total sturgeon catch. The drying up of the Aral Sea led to the significant rarity of this species.​

In English, this caviar is known as Shipova, a term derived from the Russian word « ship » meaning « thorn ». The behavior of this sturgeon is enigmatic; it prefers solitude, is nocturnally active, and exhibits selective feeding habits, ceasing to eat if the food does not meet its preferences.​

The size of the naked-bellied sturgeon ranges from 120 to 170 cm, with a weight limit of 80 kg, and it has a lifespan of approximately 30 years.​.

In 2017, fertilized eggs of the « naked-belly » sturgeon were introduced to the Acipenser farm, marking the beginning of Shipova caviar production, a process that spans six years.​

Initially, we suggest savoring Shipova Royal caviar directly from the tin to fully experience the nuanced flavors of this refined and coveted delicacy. Its distinct iodine notes pair exceptionally well with white meats, mackerel, sardines, pike terrine, or scallops.​

For alcoholic pairings, opt for infused red wines or mature white wines that complement the caviar's flavors.​
