What is the country of origin for Rova Caviar?
Rova Caviar is produced by Acipenser Madagascar farm, the first sturgeon farming operation in Africa and the Indian Ocean. The sturgeons are raised in a naturally preserved environment in Mantasoa to offer caviar of exceptional quality.
How is it possible to produce caviar in Madagascar?
Acipenser Madagascar farm uses modern and environmentally friendly farming techniques to produce caviar. The sturgeons are raised in optimal conditions in the pure waters of Lake Mantasoa.
How do I choose the right tin size for my caviar?
The various tin sizes from Maison Rova Caviar allow you to choose the quantity of caviar based on your needs and preferences.
- 30g for a first tasting
- 50g to enhance an appetizer or dessert
- 125g to elevate a main dish
How should caviar be stored?
Caviar should be stored in a refrigerator set between 0°C and 4°C until the expiration date indicated on the back of each tin. Maintaining these temperatures is essential to ensure the excellence of Rova Caviar before opening. After opening, be sure to consume it within 24 hours.
How should caviar be served?
For a traditional tasting, place the opened tin on a bed of crushed ice, then serve the Rova Caviar using a mother-of-pearl, porcelain, unvarnished wood, or gold spoon (avoid metal, stainless steel, and silver as they can oxidize the caviar). Enjoy it as you prefer: pure, on toast, blinis, steamed potatoes, fresh pasta, with or without thick crème fraîche, alongside scrambled eggs, soft-boiled eggs, hard-boiled eggs, fresh or smoked salmon, scallop carpaccio, or beef tartare.
What to drink with caviar?
Traditionally, caviar is enjoyed with vodka, but you can also pair it with a glass of champagne, dry white wine, cognac, whisky, or sake. At Rova Caviar, it is also savored with smoked tea, a particularly refined and trendy non-alcoholic combination.
Can I freeze caviar?
To preserve its texture, caviar should never be frozen. Although it may be tempting to freeze caviar to extend its shelf life, this practice is strongly discouraged to maintain its texture: the delicate eggs may burst during thawing. To store caviar, place the tin horizontally in a refrigerator set between 0°C and 4°C.
How much caviar am I allowed to carry on a plane?
If you need to fly, you are allowed to travel with up to 125g of caviar, which should be placed flat in checked luggage to prevent the eggs from being damaged. These security measures are in place to prevent international trafficking. To best prepare for your trip, it is recommended to check with the departure and arrival airports regarding the permitted amount of caviar. To keep your caviar fresh during the journey, place it in an insulated bag with two to three ice packs.
How should caviar be enjoyed?
Caviar can be enjoyed pure, on a tasting spoon, or on the back of your hand, accompanied by spirits or non-alcoholic aperitifs.
What are the recommended food pairings with caviar?
Caviar is traditionally served with blinis and crème fraîche. It also pairs perfectly with potatoes, eggs in all forms, cauliflower, and pasta. Additionally, it complements seafood such as lobster, sea urchins, and scallops.
What does the term “malossol” mean?
Rova Caviar Madagascar products are described as «malossol», a Russian word meaning «lightly salted». Malossol caviar refers to caviar that has been cured with a small amount of salt (less than 4%).

What are the delivery zones?
We currently deliver to France, Luxembourg, Belgium, Monaco and Spain.
How much does delivery cost?
Delivery is free of charge in Metropolitan France for orders over €150 including taxes.
What are the delivery times?
As a guideline, typical delivery times following order confirmation are as follows:
- Metropolitan France and other countries listed: 2 to 3 business days
- For orders confirmed before 12:00 PM, Monday through Thursday (excluding holidays), the order will be dispatched the same day, subject to stock availability.
- For orders confirmed on Friday, Saturday, and Sunday, the order will be dispatched on the following Monday, subject to stock availability.
Delivery costs are calculated automatically during checkout and will be displayed on the order summary page before final confirmation.

All orders are payable in cash and in euros. Payments are made online via credit card (Carte Bleue, Visa, or Eurocard Mastercard).
