Baeri caviar, originating from the Siberians Acipenser Baerii sturgeons, yield exceptionally large eggs when produced at the Acipenser farm. This unique characteristic is attributed to Madagascar's distinct terroir and the meticulous care provided to the sturgeons at the farm. The Acipenser Baerii, native to Siberia, is recognized as the most widespread sturgeon species globally. This species is easily identified by its smooth black to light gray skin and distinctive elongated snout. Known for its calm temperament, the Siberian sturgeon prefers to feed leisurely and enjoys dwelling in deeper waters. It holds the distinction of being the first species introduced to the Acipenser farm in 2013. For the Siberian sturgeon, a period of six years is required to produce caviar, with the eggs typically measuring at least 2.7mm. In this species, the maturity of the eggs is directly proportional to their size. On the farm, the eggs of the Acipenser Baerii sturgeon can grow to as large as 2.9mm over a period of eight years, showcasing the impact of both time and the nurturing farm environment on their development.
