The distinctiveness of Persicus Royal caviar lies in the size of its grains, which are marginally smaller than those of its cousin, the Russian Ossetra, making it a round and finely balanced caviar.

From the inception of Madagascar's caviar narrative, the primary goal has been to curate new and exceptional experiences. Guided by this ambition, the founders of the Acipenser sturgeon farm embarked on a quest to revive extinct species, among them the Iranian Ossetra, a variety that evokes nostalgic childhood memories for caviar aficionados, akin to Proust's Madeleines.
For many years, the Iranian sturgeon was not distinguished as a separate species under CITES due to its physical similarities with the Russian sturgeon, leading to its oversight. However, once identified, the Iranian sturgeon faced rapid extinction in its native Iran, transitioning from unrecognized to extinct in a brief period.
Given that the sturgeon is not native to Madagascar, the farm imports only fertilized eggs to protect the island's ecosystem. Professor Chebanov, a globally recognized sturgeon authority, has supplied Acipenser Madagascar with fertilized eggs for years. Impressed by the team's dedication and hard work, he decided to surprise them during one shipment. Among the delivery, a small bag marked with a black cross stood out. Professor Chebanov advised handling it with exceptional care. Upon arrival in Madagascar, the team quickly realized that this special delivery contained the elusive Iranian sturgeon, marking its reemergence in the CITES records. This achievement was officially recognized in December 2017 with a visit from the Iranian Minister of Agriculture to Acipenser Madagascar. Since 2018, efforts have been made to gradually reintroduce this species to farms, although it will remain exceedingly rare for many years. After seven years of cultivation, this reintroduced species now produces the Iranian Ossetra caviar.
