Historically, this straightforward and swift method was favored by caviar traders and ikrianchikis, a term used in Russia to describe caviar preparers. The phrase « À la royale » is believed to have originated with the Tsar's tasters, who were perpetually on the lookout for poison. While some today may regard this tasting method as too casual, for many it continues to be a cherished tradition, embodying the rich heritage of caviar tasting.
