Alexandre Guerrier, Christophe et Delphyne Dabezies, trois dynamiques entrepreneurs français installés depuis la fin des années 90 à Madagascar, désirent diversifier leurs activités.
Spécialisés dans la confection de vêtements pour les Maisons de Luxe et de Haute Couture du monde entier, ils se lancent alors dans une aventure humaine exceptionnelle et créent leur propre ferme d’esturgeons pour fonder la Maison de Luxe Rova Caviar Madagascar.
La ferme d’esturgeons se divise en deux sites appelés respectivement le site « terre » et le site « lac » au sein de la commune d’Ambatolaona à environ 1h30 de voiture de la capitale Tananarive. La création du site « terre » date de 2009 et celle du lac de 2015.
L’esturgeon Sibérien (caviar Baerii) est la première espèce présente au sein de la ferme et arrive en 2013.
L’année 2014 marque l’arrivée de l’esturgeon Russe (caviar Osciètre) et l’année 2016, celle du Béluga (caviar Béluga) et de l’esturgeon Iranien (Caviar Iranien).
En 2017, l’esturgeon « à ventre nu » (caviar Shipova) fait son apparition et un an après, la ferme obtient la Certification ISO 14001 par AFNOR.
2019 est également une année emblématique grâce à l’arrivée de l’esturgeon Étoilé (caviar sévruga) et une première production de caviar estimée à 4,2 tonnes.
Ainsi, il aura fallu dix ans pour construire la ferme d’esturgeons et importer l’ensemble des espèces souhaitées et il faudra dix nouvelles années pour laisser le temps à chaque espèce de produire son caviar.
En 2029, la ferme aura atteint son rythme de croisière.

Les brumes matinales transpercées par les premiers rayons du soleil laissent apparaître une végétation luxuriante bordée de pins et d’eucalyptus se reflétant dans une infinie étendue d’eau.
Les clapotis réguliers de l’impact des pagayes d’une pirogue de pêcheurs et les cancannements d’un vol de canards à bosse viennent soudain troubler le silence et la sérénité du mystérieux lieu ; sur les hauts plateaux de Madagascar, le lac de Mantasoa s’éveille…
Perché à 1400 mètres d’altitude à une soixantaine de kilomètres à l’est d’Antananarivo, il s’étend sur une surface de plus de 2000 hectares en dominant notamment le village d’Ambatolaona situé quinze kilomètres en aval. Alimenté uniquement par les eaux de pluie, loin de toute pollution ou d’industrie, le lac de Mantasoa offre ainsi une eau fraîche d’une extrême pureté. Un écrin vierge naturellement adapté à l’élevage de l’esturgeon.
Ainsi, depuis la création de la ferme Acipenser, trente structures géantes ont été installées sur le lac pour élever dans des conditions parfaitement écologiques, les grands poissons aux oeufs précieux.

Après des années de travail, le premier caviar est produit le 26 juin 2017, le jour de la fête nationale de Madagascar. Il porte le nom de Rova Caviar Madagascar.
« Rova » fait référence au nom du Palais de la Reine surplombant la capitale, Antananarivo; un emblème national qui estampille les boîtes « d’Or noir. »
En janvier 2019, Rova Caviar Madagascar s’est invité à Lyon, capitale mondiale de la gastronomie à l’occasion du Sirha, célèbre pour être le rendez-vous incontournable des chefs étoilés, des meilleurs ouvriers de France, des professionnels de l’hôtellerie et de la restauration. Le stand installé sur la célèbre « Place du Marché », n’a pas désempli ! Soixante kilos de caviar ont ainsi été dégustés au cours des quatre jours de la manifestation. Consacré par les professionnels comme la révélation de l’édition 2019, le caviar de Madagascar a conquis l’ensemble des visiteurs et les plus célèbres chefs étoilés.
De Lyon à Biarritz, de Reims à Limoges, de Paris à Chamonix en passant par Cannes, pour ne citer que quelques villes, Rova Caviar Madagascar a été sélectionné dans toutes les régions de France par les professionnels et les amateurs les plus exigeants.
Rova Caviar se trouve aujourd’hui aux quatre coins du monde tels que Madagascar, l’Afrique du Sud, Hong Kong mais aussi en Europe.
Fruit d’un véritable pari écologique, économique et social, Rova Caviar Madagascar est aujourd’hui l’unique caviar d’Afrique et de l’Océan Indien réunis. Au-delà de cette originalité, il constitue une vraie fierté nationale pour les Malgaches.
La « Grande Ile » rejoint ainsi le club fermé des pays producteurs et, à l’instar de ses gousses de vanille, de ses crevettes sauvages ou de ses fèves de cacao, son caviar rime déjà avec qualité, engagement et quête de l’excellence.
Pour le village d’Ambatolaona, la création de la Maison Rova Caviar Madagascar a marqué le départ d’un renouveau économique sans précédent. Entre le site terrestre situé à quelques minutes de piste du centre et le site lacustre quinze kilomètres en amont, 80% des 300 collaborateurs de la ferme Acipenser ont été recrutés parmi les habitants du village. Grâce à une politique interne de formation continue dispensée par des formateurs qualifiés, ils évoluent progressivement au sein de la filière en découvrant les différents métiers liés à la pisciculture, à la production du caviar et à sa commercialisation. Par ailleurs, les besoins de l’entreprise en matières premières, matériaux et autres produits de consommation ont entraîné l’ouverture de nouveaux commerces dans le village.
Au-delà de cette formation, Rova Caviar Madagascar consacre d’importants moyens pour des actions de bien-être, d’épanouissement et de responsabilité : prise en charge complète des soins médicaux, cours d’alphabétisation, cours de natation, enquêtes de satisfaction, formation à l’hygiène, à la sécurité et au secourisme, cours de planning familial, sensibilisation aux économies d’énergie, au recyclage des déchets, mise à disposition d’un jardin potager, rencontres sportives, excursions…

Enfin, à travers les dons de chair d’esturgeon à différentes écoles et orphelinats, la ferme contribue à une meilleure alimentation de nombreux enfants.
Produit de luxe par excellence, le caviar de Madagascar permet à de nombreuses familles de mieux vivre.
Dès 2009, Rova Caviar Madagascar a pensé et réfléchi à la protection de la nature et de la biodiversité environnante. La première initiative fut la création d’un permis environnemental auquel est joint un cahier des charges strict reprenant tous les éléments de mesure de propreté de l’eau avec les paramètres physico-chimiques. Du choix des matériaux utilisés pour la construction des bâtiments à la fabrication internalisée des aliments issus de l’agriculture locale pour les esturgeons, en passant par la production d’électricité au moyen de panneaux solaires, des bassins à terre en mode gravitaire, la revalorisation des déchets où le recyclage, aux actions de « Responsabilité Sociétale des Entreprises »… tout a été mis en oeuvre sur les sites terrestres et lacustres de la ferme pour que l’impact environnemental de l’élevage soit le plus faible possible.
Une réalité aujourd’hui certifiée officiellement par l’AFNOR AFAQ ISO 14001, pour une ferme labellisée éco-responsable.
L’Office National pour l’Environnement (ONE) peut également intervenir pour contrôler la conformité des installations et protège Acipenser des installations d’élevages informelles qui pourraient dégrader l’eau et l’environnement du lac.
Grâce à une intégration verticale de sa production (ferme Acipenser) à sa distribution (Rova Caviar Madagascar), il n’y a que très peu d’intermédiaires créant ainsi une qualité de caviar exceptionnelle.
Aucune hormone de croissance n’est utilisée pour faire grandir les esturgeons plus rapidement et il n’y a aucune importation de poissons adultes au sein de la pisciculture Acipenser car ils seraient susceptibles de ramener des maladies. Aussi, aucune espèce hybride n’est utilisée mais seulement des espèces pures ; c’est-à-dire qu’aucune reproduction non naturelle n’est effectuée.
L’esturgeon demande une attention rigoureuse et une vigilance de tous les instants sur plusieurs années. Rien ne peut être négligé, de l’éclosion au conditionnement. Tout a été pensé et conçu pour son bien-être à travers une maîtrise absolue de la chaîne de production.
La fabrication du caviar nécessite un réel savoir-faire artisanal. Une dizaine de gestes délicats sont nécessaires. Les collaborateurs de la ferme ont été formés par les plus grandes maisons françaises pour révéler ce produit si rare, dans la plus pure tradition.
Patience, soin et respect sont les maîtres mots.

L’agrément sanitaire et zoosanitaire
Rova Caviar possède l’agrément sanitaire depuis 2018 et zoosanitaire depuis 2019. Le sanitaire concerne la production de caviar et le zoosanitaire l’élevage d’esturgeon. Ces deux agréments certifient que Rova Caviar a un système de qualité permettant d’éviter les contaminations de l’élevage et du caviar, assurant ainsi la sécurité du caviar vis-à-vis du consommateur. Ces agréments sont des documents officiels délivrés par les autorités sanitaires halieutiques malgaches (ASH).

La vente en ligne des produits présentés dans le site est réservée aux livraisons à effectuer en France métropolitaine. Les livraisons sont faites à l’adresse indiquée lors de la commande qui ne peut être que dans la zone géographique.
A titre indicatif, les délais usuels de livraison, suite à la validation de la commande sont les suivants :

MODALITÉS DE LIVRAISON
Les livraisons seront effectuées par Chronofresh en France métropolitaine.
Le client est responsable des mentions relatives au nom et à l’adresse du destinataire (code de porte, étage, téléphone…) pour permettre une livraison dans les conditions normales, et afin d’éviter tout retard ou problème de livraison entraînant un coût supplémentaire de reliaison à votre charge.
Une adresse de livraison en boîte postale ne pourra être prise en compte.
L’acheteur est livré à son domicile, signe le bordereau de transport et est tenu de vérifier en présence du livreur l’état et le nombre de colis livrés.
En cas de manquements, de dégradations ou toute autre anomalie, le client émettra des réserves sur le bon de livraison à la réception du colis.
Sans le respect de cette clause, aucune procédure de remboursement auprès du transporteur ne pourra être entamée.
Nous assurons la marchandise jusqu’au lieu de livraison.
En cas d’absence, l’acheteur ou le destinataire du produit commandé reçoit un avis de passage, ce qui lui permet de prendre contact avec le transporteur afin de pouvoir retirer son ou ses colis. Le retrait devra alors avoir lieu dans les 24 heures ouvrées en raison de la nature périssable du ou des produits.
ADC SELECTION SAS ne pourra en aucun cas être tenu pour responsable d’une éventuelle dégradation des produits en raison de la réception tardive d’un colis due à l’absence du client ou de la personne habilitée à le recevoir.

Rova Caviar est livré dans un sac isotherme avec un gel pack (recharge de glace) qui ne devra pas être en contact direct avec la boîte. Chez vous, conserver le caviar au réfrigérateur entre 0°C et +4°C.

Rova Caviar est consciente de la qualité de l’environnement dans lequel elle s’est implantée, c’est pourquoi la Maison met tout en œuvre pour le protéger. Afin d’assurer un contrôle objectif des mesures environnementales, Rova Caviar suit les directives de la certification ISO 14 001. Ainsi, tous les ans, le système de management environnemental est révisé et évalué
Échanges et retours en ligne
Les acheteurs et personnes physiques non professionnelles bénéficient d’un délai de rétractation de 14 jours ouvrables à compter de la date de livraison de la commande (accessoires Rova Caviar).
Toutefois, ce droit de rétraction ne s’applique pas pour les contrats de fourniture de certaines denrées périssables agroalimentaires tels que nous proposons sur notre site (notre Caviar).

In 2009, the story of Madagascar Caviar began.
Alexandre Guerrier, Christophe and Delphyne Dabezies, three dynamic French entrepreneurs who had been living in Madagascar since the end of the 1990s, wanted to diversify their activities.
Specializing in the production of clothing for luxury and haute couture houses around the world, they embarked on an exceptional human adventure and created Acipenser, their own sturgeon farm to found the luxury house Rova Caviar Madagascar.
The sturgeon farm is divided into two sites respectively called the “land” site and the “lake” site within the commune of Ambatolaona, about 1h30 drive from the capital Antananarivo. The “land” site was created in 2009 while of the lake site was created in 2015.
The Siberian sturgeon (Baerii caviar) is the first species present on the farm and arrives in 2013.
The year 2014 is stamped by the arrival of the Russian sturgeon (Oscietra caviar) followed in 2016 both by the arrival of the Beluga (Beluga caviar) and the Iranian sturgeon (Iranian caviar).
In 2017, the “bare-bellied” sturgeon (Shipova caviar) made its appearance and a year later, the farm obtained ISO 14001 certification from AFNOR.
2019 is also an emblematic year thanks to the arrival of the Star Sturgeon (Sevruga caviar) and a first production of caviar estimated at 4.2 tons.
The year 2021 symbolizes the first production of Oscietra caviar.
Thus, it will have taken ten years to build the sturgeon farm and import all the desired species and it will take another ten years to give each species time to produce its own caviar.
By 2029, the farm will be fully operational.
The morning mists pierced by the first rays of the sun reveal lush vegetation bordered by pine and eucalyptus trees reflected in infinite expanse of water.
The regular lapping of a fisherman’s paddles as his pirogue glides along the water and the quacking of a flight of knob-billed ducks suddenly disturb the silence and serenity of the mysterious place; on the high plateaus of Madagascar, Lake Mantasoa awakens…
Perched at an altitude of 1400 meters, some sixty kilometers east of Antananarivo, the lake covers an area of more than 2000 hectares, dominating the village of Ambatolaona, situated fifteen kilometers downstream. Fed only by rainwater, far from any pollution or industry, Lake Mantasoa offers fresh water of extreme purity. A naturally pristine setting, perfectly adapted to sturgeon farming.
Thus, since the creation of the Acipenser farm, thirty considerable structures have been installed on the lake to raise the large fish with their precious eggs in perfectly ecological conditions.
After years of work, the first caviar is produced on June 26, 2017, the national day of Madagascar. Its name will be Rova Caviar Madagascar.
“Rova” refers to the name of the Queen’s Palace overlooking the capital, Antananarivo; a national emblem that stamps the tins with “Black Gold”.
In January 2019, Rova Caviar Madagascar invited itself to Lyon, the world capital of gastronomy on the occasion of Sirha, famous for being the uppermost meeting event for starred chefs, the best “ouvriers de France”, hotel and restaurant professionals. The stand set up on the famous “Place du Marché” was never empty! Sixty kilos of caviar were savored during the four days of the event. The Malagasy caviar was hailed by the professionals as the revelation of the 2019 edition, and won over the visitors as well as the most famous starred chefs.

For the village of Ambatolaona, the creation of “La Maison Rova Caviar Madagascar” marked the beginning of an unprecedented economic revival. Between the land site located a few minutes by track from the center and the lake site fifteen kilometers upstream, 80% of the 300 employees of the Acipenser were recruited among the inhabitants of the village. Thanks to an internal policy of continuous training provided by qualified trainers, they are progressively evolving within the industry by discovering the various jobs related to fish farming, caviar production and marketing. In addition, the company’s needs for raw materials and other consumer products have led to the opening of new shops and trades in the village.
In addition to this training, Rova Caviar Madagascar devotes significant resources to actions for well-being, self-fulfillment and responsibility: complete coverage of medical care, literacy courses, swimming lessons, satisfaction surveys, training in hygiene, safety and first aid, family planning courses, awareness of energy saving, waste recycling, with the provision of a vegetable garden, sports meetings, and excursions.
Rova Caviar has pledged itself to the improvement of the daily lives of the surrounding and to the protection of the local environment by listening to the needs of the people and by giving back to them through various schemes including the financing of projects such as the repair of roads, the restocking of Lake Mantasoa and a donation of life jackets to support the activity of artisanal fishermen, the planting of trees for reforestation, the installation of standpipes or wells in Ambatolaona, logistical and financial support to the gendarmerie brigades fighting against poaching, and hazards prevention.
Convinced that the development of villages and the blossoming of their inhabitants are inseparable from education, Rova Caviar Madagascar raises the awareness of schoolchildren from an early age by financing interventions by passionate collaborators in the protection of the environment, gardening, and the combat against wastefulness, as well as water pollution, and waste recycling. Rova Caviar also organizes, in close partnership with village chiefs, prevention and information campaigns on family planning for the inhabitants. Finally, through donations of sturgeon meat to various schools and orphanages, the farm contributes to a better diet for many children.
As an ultimate luxury delicacy caviar from Madagascar enables many families to live better.
Since 2009, Rova Caviar Madagascar has thought and reflected on the protection of nature and the surrounding biodiversity. The first initiative was the creation of an environmental permit to which are attached strict specifications that include all the elements for measuring and maintaining the cleanliness of the water with physico-chemical parameters. From the choice of materials used for the construction of the buildings to the in-house production of feed for the sturgeon from local agriculture, the production of electricity using solar panels, the land-based ponds in gravity mode, the reuse of waste or recycling, to the actions of “Corporate Social Responsibility, everything has been implemented on the farm’s land and lake site so that the environmental impact of the breeding is as low as possible.
This is now officially certified by AFNOR AFAQ ISO 14001, for a farm with the eco-responsible label.
The National Office for the Environment (ONE) can also intervene to control the conformity of the installations, and protects Acipenser from informal breeding installations that could degrade the water and the environment of the lake.

The sturgeon requires rigorous attention and constant vigilance over several years. Nothing can be neglected, from hatching to conditioning. Everything has been thought out and designed for its well-being through absolute control of the production chain.
The production of caviar requires a real “savoir faire”. About ten delicate steps are necessary. The farm’s employees have been trained by the greatest French companies to reveal this rare product in the purest tradition.

Rova Caviar obtained its sanitary approval in 2018 and the zoosanitary approval in 2019. The sanitary approval concerns caviar production and the zoo-sanitary certification concerns sturgeon farming. These two accreditations certify that Rova Caviar has a quality system that prevents contamination of the farm and the caviar, thus ensuring the safety of the caviar for the consumer. These approvals are official documents issued by the Malagasy fisheries health authorities (ASH).

GEOGRAPHICAL AREA – DELIVERY TIMES AND COSTS
The online sale of products presented on the site is reserved for deliveries to be made in metropolitan France. Deliveries are made to the address indicated at the time of the order, which can only be within the geographical area.
As an indication, the usual delivery times, following validation of the order, are as follows:
– Metropolitan France and other countries defined on the list: 2 to 3 business days.
For all orders confirmed before 12 pm, from Monday to Thursday (excluding bank holidays), the order will be dispatched the same day subject to availability of stocks.

TERMS OF DELIVERY
Deliveries will be made by Chronofresh in metropolitan France.
The customer is responsible for providing the name and address of the recipient (door code, floor, telephone number, etc.) to guarantee all delivery under normal conditions, and to avoid any delay or delivery problems resulting in an additional cost of binding at your expense.
A delivery address in a post office box cannot be taken into account.
The delivery will be made to the address provided by the customer who will then sign the delivery receipt and will be bound to check in the presence of the deliverer for the condition and the number of packages delivered.
In the event of shortages, damage or any other anomaly, the customer shall make comments on the delivery note upon receipt of the package.
If this clause is not observed, no claim procedure against the carrier can be made.

In case of absence, the buyer or the consignee of the ordered product receives a notice of passage, which allows him to contact the carrier in order to withdraw his parcel(s). Pick-up must then take place within 24 working hours due to the perishable nature of the product(s).
ADC SELECTION SAS can in no circumstances be held responsible for any deterioration of the products due to the late receipt of a package due to the absence of the customer or the person authorized to receive it.

Rova Caviar is delivered in an isothermal bag with a gel pack which should not be in direct contact with the box. At home, keep the caviar in the refrigerator between 0°C and +4°C.

In order to ensure an objective control of environmental measures, Rova Caviar complies with the guidelines of the ISO 14001 certification.
