Baeri caviar, derived from Siberian sturgeon, features medium-sized grains with a delightfully velvety texture. It is currently the most widespread and proves to be ideal for a first caviar tasting. The eggs of this caviar reach their full maturity after approximately six years of cultivation.
The « Royal » Baeri quality stands out for its mouthwatering generosity, featuring vibrant black grains and a light, velvety, and silky texture. It awakens the taste buds with a lingering marine, iodized fragrance. The Baeri caviar from the « Imperial » range offers intensely black grains. These generous pearls glide on the palate, delivering a creamy flavor with buttery notes.
Ossetra caviar is obtained from Russian sturgeon after a seven-year breeding period. It is characterized by a high genetic diversity, offering eggs ranging from light brown to darker brown, with hints of green or gold. Esteemed by chefs, Ossetra caviar is prized for its large grains, relatively firm texture, and robustness, allowing for excellent preservation and high-quality maturation. The « Imperial » Ossetra caviar differs from the « Royal » quality in terms of the size of its grains and their lighter color.
