The Caspian Sea, one of the oldest natural habitats for sturgeon, is renowned as the origin of the Acipenser Gueldenstaedtii, the species responsible for the esteemed Ossetra caviar. This particular fish is easily distinguished from others by its short snout and its unique skin texture, which ranges from rough black to yellow and features prominent escutcheons. More active than its Acipenser Baerii counterpart, the Russian sturgeon, from which Ossetra caviar is derived, feeds vigorously and utilizes the entire space of its rearing tank.​ the Acipenser Gueldenstaedtii sturgeon, also known as the Russian sturgeon, was the second species introduced to the Acipenser farm. It takes approximately 7 years to produce eggs ranging in size from 2.8 mm to over 3.2 mm in diameter. This fish is raised with a profound respect for both nature and animal welfare, which contributes significantly to its exceptional breeding performance.
