The Beluga Sturgeon

Among the many species of sturgeon, the Beluga sturgeon stands out not only for its colossal size but also for its impressive longevity and prehistoric heritage.

This sturgeon can grow over 7 meters in length and weigh up to 1.5 tons. It is not only one of the largest freshwater fish in the world but also one of the oldest, with a life expectancy that can exceed 100 years. Its exceptionally long reproductive cycle, between 15 and 20 years before the first harvest, makes it the ultimate symbol of patience and exacting standards.

The French Art of Farming

In a preserved environment, fed by pure, fresh waters, the Acipenser farm has recreated a habitat that promotes the well-being of the fish while respecting their natural rhythm.

Since its inception, the Acipenser farm has placed quality and animal welfare at the core of every action. The year 2016 marked the arrival of the Huso Huso sturgeon, also known as the Beluga sturgeon.

Renowned for being particularly demanding to raise, the Beluga sturgeon was welcomed with the utmost care, in strictly controlled conditions tailored to its specific needs. Each sturgeon is individually monitored and fed with handcrafted feed developed on-site at the farm, ensuring a natural and balanced diet.

Beluga Caviar: A Rarity for Connoisseurs

With consistency and patience, Rova Caviar follows the growth of its Beluga sturgeons through a positive development process. Each year, the fish gain an average of 7 kg, gradually reaching their optimal potential.

The house rigorously anticipates the next steps: a new series of ultrasounds is scheduled for this year to evaluate the maturation of the 9-year-old females.

Several years ago, Acipenser Madagascar welcomed its first Beluga sturgeons, with the patience and precision that such a species requires. Today, this quiet work continues, as we look forward to one day unveiling a truly exceptional caviar, crafted for the most discerning palates. A rare project shaped by time, nature, and savoir-faire.
